Tartine makes the best cheesy Gougere's (other goodies: banana cream tart, eclairs...). You definitely want to know some of their baking secrets. Available at Amazon.com. Update: I finally tried out the Gougere recipe. It's so good. Elisabeth is right, you have to make sure that the outside of the dough is encrusted with a lot of cheese before you bake it to give it the strong cheese flavor. Once it's hot out of the oven, a glass of red wine makes the perfect pairing. Highly recommended. Watch how she makes it.
